Do you use dipper wells to store utensils between uses?

No, we do not use dipper wells.

Dipper wells are used to rinse and hold utensils on the front line.  Many dipper wells have faucets that flow continuously throughout the business day.  A typical dipper well might waste as much as 175,000 gallons of water a year and end up costing you a lot of dough! 

If possible, consider eliminating the use of dipper wells altogether.  If the dipper well is a "must", turn down the flow and determine if more savings are possible by adding a low-flow feature.
