Providing vegetarian options is good for business and good for the planet.

Ever heard of LOHAS?  LOHAS is an acronym for Lifestyles of Health and Sustainability.  LOHAS is a market segment---a group of like-minded consumers---focused on health and fitness, the environment, personal development, sustainable living, and social justice.

The U.S. LOHAS market has been conservatively valued at about $209 billion and as many as 1 in 4 adults falls into this group.  LOHAS consumers are interested in a variety of issues, especially those related to their personal health.  This segment accounts for over half of the LOHAS market ($118 billion).

In addition, LOHAS consumers are motivated by environmental issues.  A recent United Nations report states that, "[The meat industry is] one of the top two or three most significant contributors to the most serious environmental problems, at every scale from local to global. The findings of this report suggest that it should be a major policy focus when dealing with problems of land degradation, climate change and air pollution, water shortage and water pollution and loss of biodiversity." 

Simply put: vegetarian options are important to a very large---and growing---group of influential consumers.
